The media itself Valentin Moricet (Love is in the Meadow) and Laurent Favre-Mot never short of a good idea. Their latest whim: partially transforming the Saint-Daniel farm of the first named into a place of sharing and gastronomy orchestrated in the second city, an idea that the two accomplices began to simmer during the confinements .
“Be careful, we’re not talking about a restaurant. Here, it’s a farmer’s table”, hastened to determine the farmer in Vildé-Guingalan, near Dinan (Côtes-d’Armor), known for its vegetables, also known for its edible flowers and exotic products.
Promotion of local products
Right in the middle of his 6,000 m2 vegetable garden, “as a result, it makes it the largest terrace in the region”, the scene is set: he installed a straw hut and put and a glass roof under which can shelter in the event of an accident, bad weather, under which the cook also has the need to work and prepare his dishes.
But there is no stove or hob, “everything is done on the barbecue and over a wood fire”, in the purest Mediterranean style Laurent Favre-Mot, the Marseillais, mastered to perfection, “voluntarily” linked to this bag – that adventure. .
“The idea is to improve my production of organic vegetables. But not just mine, the friends of local farmers and producers, like the meat from Alexandre Reis from Triskell Rouge in Evran, the honey from the bobitalaise hive from Pascal Huard and Delphine Hébert, the beer from Dinan from Marek Fest and Christophe Bernard, and so on”, spontaneously quoted the market gardener.
“That our products are valued and paid their fair price”
It is in the spirit of sharing that suits him well, “with the desire that our products are bought and paid for their fair price. We also want to innovate, and create an original concept. “
The place lends itself to good humor and meetingthe scenic boules court that almost borders the terrace brings its touch of sophistication and encourages you to prolong the meal (or to precede it, depending).
A visit to the vegetable garden will be appreciated by the owner of the place, always happy to show his work and to marvel at his world with the variety of his plantations (and indeed his exotic experiments).
Six o’clock lamb and zucchini flower fritters
“I was surprised to see so many people, about ten people at a time”, surprised after the first services Valentin Moricet, already worried at that time about the condition of his products, well attacked by drought. The first customers came from the surrounding area, but also from Calorguen, Dinan or Dinard.
It is true that the menu offered at the farmer’s table is attractive and has something to appeal to the best gourmets.
On that day: octopus grilled over wood fire, zucchini flower fritter, Greek salad, lamb and/or pork cooked for six hours at low temperature, roasted potatoes and other homemade pastries… All at affordable prices: €8 for salad or starter, €20 for main course, €6 for dessert.
Culinary workshops, arrays of jams and spirits
Valentin Moricet’s table paysanne welcomes its guests on Friday and Saturday, for lunch and dinner. On Sundays, a rustic brunch is offered.
This is a first step in a larger project that should also lead to the organization, at the beginning of the school year and in the same place, of various culinary workshops, “pastries, honey, edible flowers “, creating a website for the online sale of various products, jams or vegetables in jars, but also a whole range that has been tested (and approved) of spirits produced by the gardener organically market, “vermouth, gin, rums arranged, a way I value the not. sold or unsold of my products”. No shortage of ideas, we tell you…
